One thing umma was shocked to see was how much fussy my kids are about having onion and tomatoes in their food. Yes, you read it right! Both of them would very diligently pick out the visible skins of tomatoes and separate the onion strands if they can pull it out easily. Umma was comparing them to how we were as kids. She would slice up buckets of onions while making her chicken chukka and still it wouldn’t be enough for us. We would look into the other one’s plate and tell, “Ethrayullo?” (Only this much?) 😉 I now feel we have literally given her a hard time. The kids prefer dishes where there is nothing to throw away, so roasts like these are always welcome.

 

The recipe is adapted from here. I do already have a ghee roast on the blog, but this one is a totally different recipe. There is hardly any chopping involved. The spices are freshly roasted and ground to a paste. The chillies, tamarind and yogurt land a very interesting flavor to this dish,  not to mention the ghee used. I halved the chillies to adjust to our spice levels, but do feel free to double them, if you love them really hot! The list of ingredients may sound a bit long, but that’s about it. Once you assemble everything together, making it is a breeze. This dish is good for a celebration dinner or lunch, and even to make for guests, especially if they love spicy food. Mangalorean Chicken Ghee Roast

Ingredients

  • 6 tsp ghee separated
  • 1 lime pc tamarind soaked in 1/4 cup hot water
  • 1 tsp sugar if required
  • Salt to taste
  • FOR MARINATION:
  • 1 kg chicken cut into small pieces
  • 1/2 cup yogurt
  • 1 tsp chilli powder
  • 1 tsp Kashmiri chilli powder
  • 1 tbsp ginger garlic paste
  • 1 tbsp coriander powder
  • 1/2 tsp pepper powder
  • 1/4 tsp turmeric powder
  • Salt to taste
  • FOR ROASTING:
  • 4 Kashmiri chilli
  • 4 round dried chilli
  • 2 tbsp coriander seeds
  • 1 whole bulb garlic peeled
  • 1 inch pc ginger
  • 1 tbsp fennel seeds
  • 1/4 tsp cumin seeds
  • 1/8 tsp fenugreek seeds
  • 1 inch cinnamon stick
  • 4 cloves

Instructions

  • Marinate the chicken and set aside.
  • Heat a tsp of ghee and add all the "for roasting" ingredients. Roast for a few minutes till a nice smell comes.
  • Add 1/2 cup of water and boil till the chillies become soft. Allow to cool.
  • Peel the tamarind well into the soaked water and discard. Add the water into the roasted mixture and grind into a smooth paste.
  • In a wide saucepan, add the chicken along with the marinade and cook till it is almost done.
  • Meanwhile, in another saucepan, heat the remaining ghee. Add the paste and cook till the ghee floats up. Keep sauteing to avoid sticking at the bottom.
  • Add the chicken along with its stock into this post and cook on low flame till the chicken is completely done and the sauce thickens. Adjust the salt. In case sour, add sugar to adjust. Garnish with coriander leaves and serve hot.

  5. Despite living in Udupi I have never had this..or even if I did I probably never knew the name was this. Tried this recipe with mutton couple of months back and contrary to your kids , my husband and I were craving for onions in the dish. So much so that we ended up frying onions, tomatoes and adding it. Either I prepared ghee roast the wrong way or we are so used to having food with onions and tomato:)
    Like you said this would be perfect for your ‘picky eaters’!
