Ah… one of those days! Today happens to be my parent’s 35th anniversary. Last year, they were with my sister in the States during this time and the year before, I baked them my first dicey Black Forest Cake as a surprise. I tried calling umma today, but she didn’t answer the phone. My sister jokingly said that they must be celebrating. Hehe… Days as such have never been important in our home. It was just a normal day that would go by. For that matter, even I do the same. I don’t give much importance to birthdays or our anniversary though I still would bake or cook something special and buy gifts just to make them feel nice. But just because I don’t want them to give too much importance to those days, I buy gifts and bake special on otherwise mundane days as well. It is imprinted in the mind and somehow I don’t want to change it. 🙂 While I am missing them terribly, my bestie is back home for her brother’s wedding and I am terribly missing her. Some people are like your pillar to lean on when you feel low and she is the one for me. I was OK till now, but as the night approached, I am feeling very lonely. Today was a boring weekend as well… I better not speak about it. Since my mood is sulking, I thought – why not blog? I am still trying to get a hang of this whole thing, still something better than nothing… 🙂
When we were back home, D would order for two glasses of fresh milk – not the packet ones, but that which directly comes from the cow! 🙂 – for Azza and my sister’s boy. Some days, when the lady would not find us home, she would leave it at my aunty’s house right in front of our house and she would faithfully store it. Some days, we would end up getting four cups because of that. Just as umma poured one bottle into the saucepan and started boiling it, it curdled. She kept her hand on her head and said, ‘Eni upayogikkaan pattoolallo!’ (Now we can’t use it!) She switched off the flame and kept the lid closed so that she could dispose it off the next day morning. I felt nothing looking at that curdled milk at that time but once I woke up the next day, as if I had seen a dream, I told umma not to throw it. I immediately strained it and kept aside for it to drain the whey. As usual, my blogger folks came to my rescue and gave me loads of idea. Since coconut is so much available, I chose Meena‘s idea of making burfi with it. I must say that it was really delicious and was cleaned up by everybody within no time, though it was a very small portion that was made. It is surprising how our foodie mind works at times, even in our sleep! The plate I used was from umma’s vast collection and I took one from it to use it for my photography. Hehe… Off to the recipe….
Coconut Paneer Burfi
Ingredients
- 1 tbsp ghee plus little for greasing
- 2 cups grated coconut
- 200 ml condensed milk
- A fat pinch cardamom powder
- 3/4 cup crumbled paneer
- Nuts for garnish
Instructions
- Heat ghee in a saucepan and sauté coconut for a few minutes.
- Add the condensed milk and cook for a couple of minutes.
- Add in the cardamom and paneer and cook till the whole mixture comes together.
- Put into a greased plate and allow to set.
- Cut into shapes, top with nuts and serve warm or cold.
